Bitter bamboo shoots
Dien Bien bitter bamboo shoots are one of the famous specialties of Northwest Vietnam, usually growing on mountain slopes and hills after heavy rains. In Dien Bien cuisine, bitter bamboo shoots appear frequently in various dishes. Each dish has its own unique flavor, but all retain the characteristic bitterness – simple yet unforgettable.
Highlanders often boil the bamboo shoots and dip them in cham cheo sauce. This dipping sauce, made from mac khen (a type of spice), chili, garlic, and lemongrass, creates a fragrant, spicy aroma. The bitterness of the bamboo shoots blends with the cham cheo sauce, creating a sensation that is both familiar and unique, leaving a lasting impression on anyone who has tasted it.
Bitter bamboo shoots are also grilled over charcoal until the outer layer is slightly charred. When eaten, the outer layer is peeled off, revealing the soft, sweet, smoky bamboo shoot inside. Many families also use bitter bamboo shoots to stir-fry with wild boar meat, cook them in stream fish soup, or pickle them for year-round consumption. No matter how they are prepared, bitter bamboo shoots retain the rich, authentic flavor of the mountains and forests.
